In the winery, the grapes are destemmed into open-top fermenters by gravity, with 25% retained as whole clusters. After a 10-day cold soak, fermentation was managed by gentle hand plunging. Following 21–24 days on skins, the wine was pressed and transferred by gravity to barrel, where it matured for 16 months in French oak (25% new).
