Felton Road

20% of the fruit was retained as whole clusters, with the remainder carefully destemmed directly into fermenters by gravity, avoiding any pumping. A cold soak of 8–10 days preceded fermentation with indigenous yeasts, managed by gentle hand plunging up to twice daily. Total time on skins ranged from 21 to 25 days. The wine was then pressed and transferred by gravity into the underground barrel cellars, where it matured for 16 months in French oak (25% new).
